  13. (Please note: the green vegetables could be replaced with any other vegetables - cauliflower, peas, broad beans etc)

Instructions to make to make Spanish Chicken

  1. Sweat the onions, garlic & pepper in a frying pan with a small amount of oil until softened.
  2. Add the chicken & fry until browned.
  3. Add the courgette to the frying pan & fry until slightly browned (this will prevent the courgette becoming sloppy during slow cook).
  4. Put the gravy granules in a jug and add 1/4 pt boiling water.
  5. Transfer contents of frying pan to a casserole pot.
  6. Add all other ingredients (inc. stock) to the casserole pot & give a thorough stir to ensure everything is combined.
  7. Cook in the oven on Gas Mark 4/350F/177C for approximately 30 minutes (stirring half way through).
  8. Taste a piece of the chicken to ensure it's cooked through. Serve with vegetable cous cous or rice.
