  1. Gently fry the sausages in olive oil until nicely browned.
  2. Dice the onions and garlic whilst waiting for the sausages to brown.
  3. Remove sausages from pan when ready and put to one side. Fry onions and garlic in pan until soft.
  4. Cut the browned sausages into nice bite sized chunks and add to a heavy oven proof casserole dish or large saucepan.
  5. Add the cooked onions and garlic to the sausages along with the 2 cans of chopped tomatoes.
  6. Heat gently on the hob.
  7. Place your various types of beans in boiling water and simmer for 5 minutes to soften, then drain and add to sausages.
  8. Stir well, adding your herbs and salt and pepper. Simmer until the sauce thickens to your preference, stiring occasionally.
  9. Put a lid on it and place into an oven at about 150 / 180°F C for 30 / 45 mins. Check occasionally to ensure that it does not dry out !
